Which Tormek should I buy to sharpen knives and woodworking tools?
I will mainly sharpen chef knives, so I thought T-2 is a good choice but I might sharpen other knives or chisels in my Woodworking workshop. In this case, which Tormek is a good choice? Can I buy T-8 and add the sharpening jig that comes with T-2 Pro Kitchen Knife Sharpener?

The T-2 is ONLY for kitchen knives, You'll need the T-8 with the KJ-45 Centering Knife Jig for knives. It is not possible to use the jig from the T-2 on the T-8 - it's total different technique.
With the T-8 you'll get much more possibilities even for different knife types.
