When you sharpen on the circumfirence of a round stone, like our stones, you'll get automatically a hollow grind.
The concave shape on a 250 mm stone is on a 2mm thick tool by a sharpening angel of 20 degree as little as 0,03 mm which has not really any effect on the functionallity of the tool.
The smaller stone with 200 mm diameter has a slightly deeper concavity but still out of any effect.
