Difficult to sharpen knives

Why do some knives take a much longer sharpening time before they begin to form a burr on the edge? Some don't even seem to be touched by the machine, while others are done in one pass.

    One of the reasons is that there are many different qualities of the steel out there.
    Other resons are, how thick the blade is and if there is already a bevel established, if you sharpen a smaller angel degree on a blade then it takes longer to sharpen all the way to the egde to establish a new apex.
    You can adjust the grid of the stone to coarse with the SVP-650 Stone Grader to speed up the process and the finish with a finer grid by using the finer side of the Stone Grader.
