Blade angle

When sharpening knives, when do you leave the blade angle setting on the full grind degree e.g 30° and when do you half the degree e.g. for a 30° bevel set the angle jig to 15°. Also, my knives are wedge shaped from tip to hilt, do I add a small shim in order to keep it centered?

    If you measure against the side of the blade, you set the angle master to 15 degrees. 15 degrees on each side gives a total angle of 30 degrees.
    If you measure on the bevel, you set the angle master to 30 degrees.
    Normally for kitchen knives the bevel is too short to measure against. Therefore, it is easier to measure on the side of the blade. For most tapered knifes there should be enough adjustment in the jig so there is no need for a shim to center the knife. (KJ-45,140)
