Uneven bevel
I’m sharpening my henckels and wustoff kitchen knives with my T8, I clamp my kj-45 parallel to the blade and set the bevel angle with my ks-123. My issue is I can’t achieve a even grind on each side of the knife. Some knives the bevels are more uneven than others. I can’t Figure out what I am doing wrong? I’ve watched many of your videos along with others. Can you help?

uneven bevels ocure when sharpen more on either side, due higher, lesser pressure or number of passings over the stone. uneven clamping in the jig, especially when using the older SVM-45 instead the Centering Knife Jig.
Otherwise you have a nice and parallell bevel on both sides except on one side towards the tip. The reason can be that you lift the blade to high or clamped the blade parallell to the edge, better is to place it mor to the tip and more angled into the radius of the shape. This position makes it easier and more even to sharpen the distinct curve of the blade.
