SJ 250 Japanese Waterstone
Dear Tormek Team,
I am sharpening kitchen knifes with my new T8 using the SG 250 + leather honing wheel and after some time of practice now receive really rasor sharp cutting edges which are more than enough for normal kitchen work.
Very, very pleased with the machine and your perfect guiding videos :-).
Now I am still thinking to buy my a SJ 250.
I would not so much care about the shiny edges that can be obtained from the it ( which is nice, of course ) but like to know whether its use would really and still notably increase the sharpness of the blades copared to only going with the SG 250 + leather wheel honing ?
I red in the forum that some users think that only SG 250 + honing delivers better cutting performances compared to SG 250 + SJ 250 because they leave a kind of " small rough saw " on the edge which is lesser the case when using the SJ 250 with a smoother micro edge.
What is your actual experience ?

You are absolutely right. The SJ-250 Japanese Waterstone gives you a sharper, more even edge which lasts longer. An edge that has shape of a micro "saw" gets faster dull due the fact that the "tooth" break off and the egde looses the cutting properties. An edge that have a homogenus and closed edge, with no tooth, has a much longer performance and a "real" edge cuts even the famous tomatoes ;-).
