Honing long knives on T-8 leather wheel
Hello Team Tormek,
I've started to use my T-8 to sharpen (mostly) cooking knives. What an incredible machine. I'm having difficulty honing long knives (10" French Chef, Carving and Fish Filleting knives) on the leather wheel. The grinding wheel gets in the way because it is of a bigger diameter than the leather wheel. Even if I turn the machine the handle side of the knife gets in the way so I dont have the full length available to hone. What do you recommend? I have a front universal mount as well. I also have a 4000 grit Japanese water stone. Can this be used to hone?
