Anglemaster wm200

hello i just bought a t4 and already sharpened a few knives with success but i had a question about the anglemaster i want to sharpen a global chef's knife soon and i looked up that the angle is 17 degrees but that is 1 side so you have to do this x 2 then on the anglemaster ?is this correct?     If the use 17 degrees, that means on both sides, so the total angel is 34 degrees.
    You adjust the angel with the height of the Universalsupport to match the guide on the Angle Master with 17 degrees preselected. You need to adjust it only on one side. When you turn around the knife to sharpen the other side of the blade it will be automatically also 17 degrees. But don't change the height of the Universal support nor unclamp the blade, otherwise you have to adjust it again.

  • hello wolfgang thanks for your explanation. I was just a bit confused because I think the manual said that with thin knives for example, a total angle of 30 degrees you had to divide this by 2 and with a thicker knife you have to set the total angle.I certainly will watch the videos on YouTube thanks for the tips.

  • Hej Dietger, you're right, but the 17 degrees is already the halve angel. I found a number from Global that they sharpen between 10 and 15 degrees each side depending what type of knife it is. A 17 degree angle gives you a quite strong egde, mostly used on meat knifes. An all pourpse knife is between 12,5 and 15 degrees, a filleting knife aroud 10 degrees. These are some examples of angels per side, (doubbled is the total angle which is more commonly used when talking about angels.)
